The Turin Legato V2 is a compact home espresso machine built around a 550ml stainless steel brew boiler and a separate steam thermoblock. This hybrid design provides temperature-controlled brewing and quick access to steam without the footprint or price of a large E61 machine. A standard 58mm portafilter, adjustable OPV, dual PID settings and programmable pre-infusion make the V2 unusually flexible for its class.
Version 2 adds the controls buyers asked for: an externally adjustable OPV control screw, independent brew and steam temperature settings, and adjustable pre-infusion time and delay. Stainless steel, black and white finishes are offered as current inventory allows.

Brew boiler plus steam thermoblock
The 550ml brew boiler provides a stable reservoir for espresso water, while the separate thermoblock heats for milk steaming. You do not need to switch a single boiler from brew temperature to steam temperature.
Dual PID settings
Set the brew and steam systems independently. Brew temperature can be matched to different coffees, while steam adjustment lets you tailor milk-texturing performance.
Adjustable OPV and pre-infusion

How to Dial In the Legato V2
Begin with the factory pressure setting and a simple recipe. Weigh the coffee dose, distribute evenly, tamp level and weigh espresso yield. If the shot flows too quickly, grind finer; if it barely flows, grind coarser. Only after grind is close should you experiment with temperature, pre-infusion or OPV settings.
Pressure adjustment changes the machine’s ceiling, but the puck creates resistance. Do not use the OPV to compensate for an unsuitable grinder or uneven preparation. For milk, purge condensation, introduce air near the surface, then roll the milk until glossy. Wipe and purge the wand immediately afterward.

Cleaning and Water
Use water made for espresso equipment, avoiding both scale-heavy water and completely demineralized water. Rinse the basket and portafilter, wipe the group area and clean the steam wand after each session. Backflush according to the current manual and use detergent at its recommended interval. Contact Espresso Outlet before an OPV adjustment or internal service if you are unsure.
